Low Carb Quiche!

to start...
1 and 1/2 cup finely ground almonds ( I used my coffee grinder but a food processor works great)
1/2 cup fine parmesan cheese
6 tbs butter or marg. melted

mix together and put  on bottom of pie plate...make it pretty like a pie crust!
Cook on 350 for 10-12 minutes... let cool and use when ready to cook.

When ready to cook, preheat oven to 325
in skillet cook
1/4 chopped onion
6 mushrooms sliced
sausage, ham or veggie sausage ( I used veggie sausage yum)
When all cooked add pie pan spread out even...


I thawed frozen chopped spinach and squeezed all the juice out of it. Add to pie pan spread out even

In a separate bowl I put four eggs and two tbs milk...beat it together then added a half cup of
CHEESE!!!
Pour over top and cook for 35-46 minutes until cooked through.

Low Fat chicken enchalada casserole! NOT My recipe... from a website

1 large onion, chopped
1 medium green pepper, chopped
1 teaspoon butter
3 cups shredded cooked chicken breast
2 cans (4 ounces each) chopped green chilies
1/4 cup all-purpose flour
1-1/2 to 2 teaspoons ground coriander ( i used a Chipotle or chile spice not coriander)
2-1/2 cups reduced-sodium chicken broth
1 cup (8 ounces) reduced-fat sour cream
1 cup (4 ounces) reduced-fat Monterey Jack or reduced-fat Mexican cheese blend, divided
12 corn tortillas (6 inches), warmed
Serve with salsa and might need some salt..... This would be really good full fat but still good low fat too!
Directions

In a small skillet, saute onion and green pepper in butter until tender. In a large bowl, combine the chicken, green chilies and onion mixture.
In a small saucepan, combine flour and coriander. Add broth; stir until smooth. Cook and stir over medium heat until mixture comes to a boil. Cook and stir 1-2 minutes longer or until thickened. Remove from the heat; stir in sour cream and 1/2 cup cheese. Stir 3/4 cup sauce into chicken mixture.
Place 1/3 cup chicken mixture down the center of each tortilla. Roll up and place seam side down in a 13-in. x 9-in. baking dish coated with cooking spray. Pour remaining sauce over top; sprinkle with remaining cheese. Bake, uncovered, at 350° for 30-35 minutes or until heated through. Yield: 6 servings.

Pea Pea Soup!

Pea Soup

16 oz bag of peas rinsed.. not soaked
6 cups (one and half quart) hot water
1 to 2 minced garlic
2 cups cut ham pieces-small
1 carrot sliced or diced
1 celery stalk diced
1 tble spoon season salt ( i love Tastefully Simple)
1 tsp. pepper
put crock pot on low for 8- 10 hours
You can add a Bay Leave but I did not.
I LOVE THIS recipe... so easy and LOW fat!! yeah! and yummmy

Kale Chips

got this recipe from food network... Erik loves them and they are good.

Ingredients

1 head kale, washed and thoroughly dried
2 tablespoons olive oil
Sea salt, for sprinkling
Directions

Preheat the oven to 275 degrees F.


Remove the ribs from the kale and cut into 1 1/2-inch pieces. Lay on a baking sheet and toss with the olive oil and salt. Bake until crisp, turning the leaves halfway through, about 20 minutes. Serve as finger food.

Chocolate chip oatmeal bars

I tweaked the recipe found on the web... to healthier!


CHOCOLATE CHIP OATMEAL COOKIES OR BARS
1 c. healthy margarine like olive oil margarine...or real butter
3/4 c. white sugar
3/4 c. brown sugar/splenda substitute found at the market
2 eggs
1 tbsp. hot water
1 1/2 c. whole wheat flour
1 tsp. soda
1 tsp. salt
2 c. oatmeal
12 oz. chocolate chips
1 tsp. cinnamon
1/2 - 1 c. chopped nuts (optional) i added chopped almonds!!!!

Cream margarine or real butter, add sugar, cream together. Add eggs, hot water, mix together. Add flour, soda, salt. Add oatmeal, chocolate chips, cinnamon and nuts slowly. Mix well. Drop by spoonful on greased cookie sheet. Bake 350 degrees, 10-12 minutes.
For bars put in greased 9x11 inch pan. Bake 350 degrees 20-25 minutes. Reserve 1/2 cup chocolate chips. Put on top while still hot. After melted, spread.

2011

Here is my thoughts on the new year.....
I do believe that the change into the new year gives us an invisible marker to start fresh!~

I think that things happen for a purpose so we can learn from them.
This year my personal goal is to continue to be grateful for what I  have but make it all BETTER.
Learn to be a better mom, better wife, better cook, and better friend. I will not allow my short comings to
let me down... I will strive for my best and not perfection....I will be happy with who I am.

I will always try my best and take my time to breathe...enjoy....and laugh! My BIG new years resolution....is not to stress as much...
AND I continue to be honest with my feelings...if I am mad.. you will know... sad.. you will know...happy... you will know.

My thoughts are that being who you are...is the only way to move forward to the best you.  I appreciate all the differences in my friends that make them unique, fun and different.

I am very thankful for all my family and my husband and the best gift that keeps giving (and taking LOL) everyday...my son!
